Pineapple - Lime Jello by Mom 1 can crushed pineapple.* Heat to boiling in a pot on the stove, stir occasionally 1 large package lime jello, add to pineapple - stir till jello is dissolved, set aside to cool. (Sometimes I will set the pot in a sink of cold water, or set the pot inside another larger pot filled with ice water. You will need to stir occasionally as it thickens.) 1 (8 oz. pkg) of cream cheese (room temp), whip with beater or mixer. 1 cup chopped nuts (I usually use chopped walnuts or pecans) 1 cup chopped celery (I often use more celery than recipe calls for) 1 (9 oz. container) of Cool Whip or whipped topping Stir jello mixture into whipped cream cheese, slowly add celery and nuts. Add Cool Whip, by folding into mixture, pour into jello mold or bowl, cover and set in refrigerator to cool. Let set a couple of hours before serving. If you are using a jello mold, let the mold set at room temp for a few minutes before you try turning it upside down to transfer onto a plate. * I will use pineapple with no added sugar for this recipe.
